Hi there, I'm excited to be here at this Michelin-starred restaurant in Geneva. I'm a food journalist and I'm looking forward to learning more about Swiss cuisine.
Welcome! As a chef, I'm thrilled to share with you some of the unique characteristics of Swiss cuisine - fresh and simple ingredients, a focus on local produce, and a deep-rooted tradition of cheese-making.
Sounds delicious! What’s your favorite Swiss dish to cook?
Definitely Fondue! It's a classic Swiss-style cheese fondue made with Gruyere and Emmenthal cheeses, white wine, Kirsch and served with bread. It's a comfort food that is best enjoyed with friends and family.
That does sound tempting, and I'm sure the cheese here in Switzerland is some of the best in the world. Speaking of which, what do you think is the key to making the perfect cheese dish?
Primarily, it's the quality of the cheese. Switzerland has a rich variety of cheese, and we are proud to use them in our dishes. We also pay close attention to the cooking temperature and technique to make sure the cheese is perfectly melted and evenly distributed.
That's fascinating. What other Swiss ingredients do you enjoy working with?
I love using ingredients like potatoes, mushrooms, and fresh herbs like thyme and rosemary. These ingredients have a depth of flavor that is unique to Switzerland and add richness to many Swiss dishes.
I'm sure Swiss cuisine has evolved over the years. What trends have you noticed lately?
Traditional Swiss cuisine has evolved in recent years, incorporating modern techniques and innovative flavor combinations. We see more chefs experimenting with Swiss ingredients to create new dishes.
That’s exciting! Now, before we go, could you give me a quick cooking tip?
Sure, always use fresh seasonal ingredients and focus on cooking them simply to preserve their natural flavors. It's also essential to taste everything you cook to make sure it's the perfect balance of flavors.
That’s great advice. Thank you so much for sharing your insights with me today.
My pleasure, thank you for coming!
