Well, it's a long story, but I've always been passionate about food and cooking. I started in the industry as a dishwasher, worked my way up, and eventually became a chef.

Hmm, that's a tough question. I would say it was a foie gras torchon with hibiscus gel, pickled cherries, and brioche. It's a very delicate dish that requires precision and technique.
