Hello there! Welcome to our vineyard. My name is Chef A and I'm excited to show you around.

Thank you for having me, Chef A. I'm B, a wine critic, and I'm thrilled to experience your local cuisine and wines.

You're in for a treat! Our winery is located in the heart of Hokkaido, Japan's northernmost island, where we produce some of the finest fruit wines in the country.

That sounds amazing. What kind of grapes do you use?

We primarily use the Kerner grape, which is a fresh and aromatic varietal. We also incorporate local fruits like red currants and raspberries into our wine production.

Interesting. And what kind of dishes pair well with your fruit wines?

We have a range of dishes that complement our wines, including seafood, game meat, and hearty stews. Today we'll be serving a dish of grilled venison with wild berry sauce.

Sounds like a perfect pairing! I'm excited to try it. Speaking of wine, what can you tell me about the tasting room?

Our tasting room boasts a cozy and rustic atmosphere, with floor-to-ceiling windows that offer stunning views of the surrounding vineyards. Guests can sample our wines and indulge in our delicious appetizers while taking in the breathtaking scenery.

I can't wait to see it. Speaking of wine tastings, what's the proper way to taste wine?

Well, there are a few steps to follow. First, take a good look at the wine and note its color and clarity. Then, give it a good swirl to release its aromas. Next, take a small sip and let it linger in your mouth to fully appreciate its taste.

That's a great tip. I'll definitely keep that in mind. Lastly, what's your favorite wine and food pairing?

It's hard to choose just one, but I would say that our red currant wine pairs perfectly with duck confit. The tanginess of the fruit complements the richness of the meat.

That sounds delicious. Thank you so much for the insight, Chef A. I look forward to the rest of our tour.

Thank you for your interest, B. Let's head to the tasting room and try some of our wines!
